Basil and Lime Sorbet

A different sorbet, yet very refreshing and exotic, surely will get some ooohhhs and aaaahhhss.

Serves: 4

Ingredients

2 cups of sugar

1 cup of water 

1 cup of lime juice

5 limes zested

handful of basil 

Preparation

  • on a medium heat, heat the sugar and water to a slight boil, then simmer for 5 minutes. Will take on the texture of a simple syrup
  • in a pestle and mortar, bruise the shit out of the basil and bash it up good, add it to the warm mixture
  • seive it all into a metal bowl and transfer to the freezer for 45 minutes
  • take it out and stir it up
  • put back into freezer for an additional 30 minutes
  • remove and scoop into quenelles with a warm spoon and garnish with some basil leaves. Decent !
