Boston Baked Beans

Serves: 12

Ingredients

2 cups Navy Beans
4 cups Cold Water
1/2 small Onion chopped
1 tsp Cider Vinegar
1/2  tsp Prepared Mustard (or dry)
1 tbsp Brown Sugar
1/4 cup Molasses
1/4 cup Ketchup
1/2 lb Salt Pork (Pork Belly)
Salt & Pepper

Preparation

  • Soak the beans over night.
  • Add water and beans to a pot and bring to a boil. Simmer covered for 30 minutes.
  • Drain the pot and retain this liquid (We'll use this later).
  • Add the beans and all remaining ingredients to a crock or bean pot. Add enough of the retained water to just cover the beans.
  • Bake in 250° oven for 7 hours with the lid on. Check on the beans every few hours and add the retained water as necessary. Beans should always have water in them otherwise they'll dry out.
  • Remove the lid for the last hour of cooking.
