Ingredients

  • 1 can of Chickpeas
  • 1/4 Red Onion
  • 3/4 cup of Corn
  • 1/2 Red Pepper
  • Fresh Parsley
  • 2 tsp Cumin
  • 2 tbsp Canola Oil (or other)
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Dijon Mustard
  • 1 tsp Honey
  • Salt & Pepper

Preparation

  1. Thinly slice onion and red pepper.
  2. Roughly chop parsley.
  3. Drain and rinse chickpeas.
  4. Add chickpeas, onion, red pepper parsley and cumin to a large bowl.
  5. Combine oil, apple cider vinegar, mustard and honey to a container and shake vigorously to emulsify.
  6. Add dressing to salad along with salt and pepper to taste.
  7. Stir well and enjoy!
