Classic French 5 Onion Soup

Rustic, hearty, and flavour packed - This onion soup recipe is a sure hit with any palate on Sunday night or a Thursday lunch with a tasty pate sandwich or something - check misc. for that recipe.
Serves: 4
Ingredients
1 bunch of leeks
2 red onions
2 yellow onions
4 shallots
bunch of scallions
2 cups of beef stock
1/2 cup red wine
a nice knob of butter
bouquet garni
bit of olive oil
3 cloves of garlic
some rustic french baguette bread - kinda stale
salt and pepper
1 cup shredded gruyere cheese
drops of Worcestershire
sage leafs
Preparation
- heat olive oil with chopped garlic, and add all the onions finely chopped and washed nicely
- satuee them for around an hour or so until super soft and golden in color
- add in beef stock, wine, butter, salt and pepper, bouquet garni, and bring to a boil
- transfer and ladel into individual heatproof bowls
- toast up your bread and place it on top of the soup and then top with gruyere cheese and a fresh sage leaf
- bake for about 10 mins or until cheese is melted
- drizzle a bit of Worcestershire on top and enjoy
