Dark Chocolate Mousse

If I'm at any restaurant in the world, and they have chocolate mousse on the menu? Thats gettin' ordered 100%, same goes for foie. This is a super simple recipe, you should breeze through it.
Serves: 6
Ingredients
400g of dark chocolate
3/4 cup dark coffee ( optional )
2.5 cups 35% whipping cream
2.5 tbsp white sugar
1 tsp vanilla
Preparation
- Melt the chocolate in a double boiler (essentially it's a pot with water to steam and a glass bowl, ideally, that fits snug on top of the pot, slightly larger than the pot, and the chocolate melts by steaming )
- Remove from heat at 80% melted, and let it finish melting by cooling down - bring to room temperature ( reason being, if you add warm choclate to the cream, it will melt the cream )
- In the meantime, whip the cream + sugar + vanilla together until thick
- Once the melted chocolate has come to room temperature, gently fold it into the cream mixture until fully mixed
- Cool in the fridge for a few hours until it thickens up
- Serve in remekins or champagne glasses if you're trying to kiss a girl
