Dijon and Lemon Marinated Chicken Breast

Simple, fresh and fragrant for an elegant summer BBQ for close friends. Chicken breast stuffed with goat cheese and marinated in a sharp dijon with the fresh zest of lemon. A sure crowd pleaser, a Laya classic.

Serves: 4

Ingredients

4 cleaned boneless chicken breasts

Dijon

Oregano

Lemon

Goat cheese

Salt and Pepper

 

Preparation

  • in a large bag throw in chicken breasts, chopped oregano, one full lemon squeezed, 2 tbsp of dijon.
  • rub and massage all together and let marinate for 24 hours.
  • remove from bag and insert blade to create a pocket in the fat end of chicken and stuff with goat cheese.
  • cook on grill or oven until ready, slice into coins and serve over rice or scalloped potatoes.
