Five Bean Salad

This is a quick and easy bean salad recipe that makes enough to serve as a healthy side for a weeks' worth of lunches.
Serves: 8
Ingredients
1 can yellow beans
1 can green beans
1 can lima beans
1 can kidney beans
1 can chick peas
2 stalks of celery
1 green pepper
2 small onions (or 1 large)
1 1/2 cups vinegar
1/2 cup of water
2 cups white suagr
salt and pepper to taste
Preparation
Dressing
- Mix vinegar and water in a pot. Bring to a boil.
- Add sugar and stir until dissolved.
- Turn off heat and allow dressing to cool.
Salad
- Rinse beans and toss into a large tupperware container.
- Chop celery, green pepper and onions into edible portions and add to the bean mixture.
- Pour dressing over top.
- Add salt and pepper to taste.
- Refrigerate for at least 24 hours.
