Five Bean Salad

This is a quick and easy bean salad recipe that makes enough to serve as a healthy side for a weeks' worth of lunches.

Ingredients

1 can yellow beans

1 can green beans

1 can lima beans

1 can kidney beans

1 can chick peas

2 stalks of celery

1 green pepper

2 small onions (or 1 large)

1 1/2 cups vinegar

1/2 cup of water

2 cups white suagr

salt and pepper to taste

Preparation

Dressing

  • Mix vinegar and water in a pot. Bring to a boil.
  • Add sugar and stir until dissolved.
  • Turn off heat and allow dressing to cool.

 

Salad

  • Rinse beans and toss into a large tupperware container.
  • Chop celery, green pepper and onions into edible portions and add to the bean mixture.
  • Pour dressing over top.
  • Add salt and pepper to taste.
  • Refrigerate for at least 24 hours.
