Grilled Chicken with Lemon and Herb Puree

An amazing way to eat grilled chicken, and it looks nice too with the green sauce over top. A snap to make and will impress even the toughest critics.
Ingredients
4 chicken breasts
handfull of parsley
10 sprigs of thyme
1 garlic bunch
1 lemon
extra virgin olive oil
salt and pepper
Preparation
- grill up your chickens.
- take your whole garlic head and cut it half so the they are exposed on each side. Pour a bit of oil over top and cover in tinfoil. bake in oven for like 15 minutes.
- in a blender add your lemon zest and juice, the roasted garlic squeezed out of its skin, your herbs, 2 tbsp of EVOO, and a pinch of salt and fresh pepper.
- puree that all together and you'll get a nice green paste.
- paint that all over your chicken while it cooks, reserving some for the end.
- take off chicken and let rest, put some rice in the middle of the plate, place the chicken on top, and then drizzle some of the remaining sauce around the plate neatly. and there ya go, fancy and barely any work !
