Lemon and Blueberry Cheesecake

A really easy way to make cheesecake, tastes amazing, the sharp zip of lemon and the succulent burst of blueberries, mmmm, a sure crowd pleaser !
Serves: 10
Ingredients
2 cups of crushed graham crackers
1/2 cup melted butter
2 bricks of cream cheese
2 lemons
pint of blueberries
2 eggs
1 cup of sugar
Preparation
- melt the butter and add it to the crushed graham crackers and proceed to fit it into your baking dish which has been lined with parchment so it will be easy to remove the entire cake later on. cook that in the oven at 325 for around 12-15 minutes.
- meanwhile, blend together - cream cheese, the zest of 2 lemons, then the juice, sugar, and eggs.
- remove the crust from the oven, double baking will make it extra crispy, add the liquid and smooth out until evenly covered. Pour all your blueberries on top of it.
- bake in the oven for about 35 minutes at 325.
- remove and let cool for a while, slice into squares, and serve with fresh blueberries or a blueberry jam or compote of sorts.
