Ingredients – Sriracha BBQ Sauce

  • 1/2 cup Guinness
  • 1 cup Ketchup
  • 1/2 cup Sriracha
  • 1/4 cup Apple Cider Vinegar
  • 1/4 cup Dark Soy Sauce
  • 2 tbsp Worcestershire Sauce
  • 2 tbsp Maple Syrup
  • Juice of 1/2 Lime
  • 1 tbsp Garlic Powder
  • 1 tbsp ground Mustard Seed
  • 1 tbsp smoked paprika

Combine all ingredients over medium heat. Reduce to low, cover and simmer for 15 minutes (stirring occasionally), until sauce thickens. Remove from heat and let cool before placing in an air tight container. Keeps well in the fridge.

Ingredients – Dry Rub

  • 2 tbsp Chili Powder
  • 1 tbsp Brown Sugar
  • 1 tsp Garlic Powder
  • 1 tsp ground Cumin
  • 1 tsp ground Mustard Seed
  • 1 tsp Smoked Paprika
  • 1 tsp Salt
  • 1 tsp Black Pepper

Preparation

  1. Remove the membrane from the back of the ribs.
  2. Place ribs on a large peace of tinfoil (enough to completely wrap) and place that on a baking sheet.
  3. Apply dry rub to both sides.
  4. Wrap ribs completely (membrane side up) and cook in a 300┬░ oven for 2 hours.
  5. Remove from oven, drain excess liquid (or replace foil completely) and apply BBQ sauce to both sides.
  6. Return to oven un-covered (meaty side up) at 350┬░ and cook for 10 minutes.
  7. Remove from oven, apply another layer of BBQ sauce (to the top side only) and return to oven for 5 more minutes.
