Penne Mediterranean with Goat Cheese

A huge hit around my house here, probably my favourite pasta right now. Rustic, hearty and flavour packed! It's pretty easy to make and takes no time at all - saute up some sausage and other random items, toss with goat cheese and penne and you're laughin'.
Serves: 4
Ingredients
4 cups of penne pasta
4 sausages - chefs choice - preferably spicy
big handfull of sliced up sundried tomatoes
small handfull of anchovies - can opt out if not desired - but a nice addition
1 large red onion - diced
cup of chopped up kalamata olives
cup of soft, room temperature goat cheese - chefs choice - preferably soft
1/2 cup of sundried tomato oil or a light olive oil
salt and pepper
handfull of diced up spring onions
Preparation
- bring to a boil 10 cups of water with a large pinch of salt in it, once boiling, cook your penne
- pour about half a cup of the oil into a hot skillet and add your onions, saute them up a bunch
- take the sausage out of the casing, break it up and add to the onions
- add sundried tomatoes, anchovies, olives and some s & p
- saute that all up nicely until sausage is cooked through and onions are translucent, add dice sized chunks of goat cheese on top and let it rest in the hot mixture - this will allow for easy mixing later
- add some chili flakes if you're bold enough
- once pasta is cooked, set aside
- once mixture has settled, add spring onions and pasta and mix all together
- serve with some fresh parm and a few more dollops of goat cheese if you have, and a big smile while you hand it to your diners
