Pork Chop with Apricot, Honey and Sage

Cool new way that I discovered to make pork chops. Notably, pork chops are fantastic friends with fruit and woody herbs such as sage, so I've put together a little diddy here for us.
Serves: 2
Ingredients
2 juicy plump pork chops, with fat and bone in
small handfull of fresh sage
4 apricots
honey
salt and pepper
Preparation
- salt and pepper your pork chops while the pan is heating up. Take a leaf of sage and press it into the chop. place it sage side down in the pan and sear that off. Do the same to the other side, flip and sear. place into the oven at 350 for about 5 minutes.
- in a seperate pan, heat with a touch of butter.
- slice the apricots into quarters and sear them off quickly... about 3 minutes.
- add about 2 tbsp of honey and sautee really quick.
- add in 7-10 sage leaves and crisp them up quickly.
- remove the chops and pour the apricots over top of the chop and you've got yourself a great, fancy supper, sure to impress the most toughest critic.
- side dish can be some champ - mashed potatoes with milk, butter and scallions.
