Pulled Pork Sandwich

This pulled pork sandwich recipe is a great one for entertaining guests. It's simple to make enough for a small party and tastes delicious. You can top your sandwiches with whatever you feel like, onion, mushroom, peppers etc., or, you can keep it pure and add nothing at all. No matter the toppings, the key to perfect pulled pork is always the same and can be summed up in these three points:
- The rub
- Slow and low cooking
- The BBQ sauce
Serves: 8
Ingredients
1 tsp Ground Cumin
1 tsp Smoked Paprika
1 tsp Ground Mustard Seed
1 tsp Garlic Powder
1 tsp Salt
1 tsp Pepper
3 tsp Brown Sugar
1 cup Chicken Stock
1 Pork Shoulder
2 Celery Stalks
1 Small Onion roughly chopped
BBQ Sauce of your choice
Toppings of your choice - I always use: onion, mushrrom, green peppers, pickled jalapenos, swiss cheese
Sandwich Buns of your choice
Preparation
- Combine all the spices and mix well to create a rub for your pork.
- Wash your roast and pat dry with paper towel. Cover the roast thoroughly with the rub, cover with plastic wrap and refrigerate for at least 2 hours, but preferably overnight.
- Once your roast has marinated ensure you let it sit out long enough to come to room temperature - a cold roast will not cook properly.
- Prepare your crock pot / dutch oven by adding the onion and stock, then place the 2 celery stalks iches apart, in parallel, to serve as a "stand" for your roast.
- Add your roast, cover, and cook for 8 - 10 hours at 275°.
- Once done, remove the roast and pull all the bones and fat off. Use 2 forks to "pull" the pork apart so it's nice and stringy. Add as much or as little BBQ sauce as you like and mix well. Return the pork to an oven safe bowl or pot, cover and cook for as long as it takes to make your toppings.
- OPTIONAL - Bring a frying pan to medium high heat, add olive oil, and saute onions, peppers and mushrooms for 4 - 5 minutes.
- Set your oven to broil. Add meat to the bottom of the bun, put your toppings on and cover with the Swiss cheese and jalapenos. Add your loaded sandwiches to a baking sheet, along with the lids, and broil for 2 minutes or until cheese is melted.
