Roast Leg of Lamb

Rustic country style supper for a cold January Sunday night while watching some football, or a comfortable October night sipping some red wine with your girl - roast leg of lamb is good anytime.

Serves: 6

Ingredients

1 leg of lamb - ontario preferred - bone in preferred

5 cloves of garlic

handfull of fresh rosemary

course salt and pepper

cup of love

Preparation

  • leave fat on, and stab the leg to create some holes - shove the garlic cloves deep inside
  • finely chop up the rosemary and spread it out all over your cutting board alongside the salt and pepper, just sprinkle it everywhere
  • take the lamb leg and roll it in the spices good and hard, really get it all crusted over it, transfer it to a hot skillet and sear it on all sides for a few minutes until it browns up a bit
  • heat oven to 375 and throw the badboy in there for around an hour or so, remove it after the alloted time and let it rest for an additional 10 minutes to re-absorb the tasty juices
  • serve with some sundried mash or mini roast red potatoes, baby carrots and drizzle the lamb with fresh lemon juice, I like to eat it with tzatziki - but hey - that's just me :)
