Salmon Tartar

Absolutely the most amazing appetizer ever. Fresh, simple and packs a flavour punch. Great in the summer on a patio with a nice glass of chilled Sancerre.
Serves: 4
Ingredients
2 fresh salmon fillets
20 capers
1/2 chopped fresh dill
10 chives
1 diced up shallot
olive oil
1 lemon
salt and pepper
Preparation
- slice the salmon into very small dice sized pieces.
- add the capers, diced shallot, chives, dill, salt and pepper, ( pinch ) little squeeze of lemon and about a 1/4 cup of oil.
- mix it all together and let it sit in the fridge to set for like an hour or so.
- right before you serve, slice some cucumbers thin and line the plate in a circle with them. put the tartar on top like an ice cream scoop, squeeze fresh lemon all over top and sprinkle some rock salt and fresh pepper on it, also can top with a small pinch of greens lightly mixed with oil and fresh lemon... enjoy. * goes well with a nice chilled french white wine.
