Simple Potato Soup with Mint

It may be simple, but this soup is a delicious start to any dinner and good enough to enjoy for lunch with a crusty baguette.
Easy to make recipe which only takes about 15 minutes to prepare.
Serves: 10
Ingredients
1 tablespoon olive oil
1/2 a shallot
6 cups (48oz) of chicken broth
1lb of Yukon Gold potatoes (or potato of your choice), unpeeled and cut into large chunks
2 teaspoons of fresh, minced mint
1/2 teaspoon of fresh ground pepper
Pinch of salt
Preparation
- Using a large saucepan, fire up some medium heat on a large element.
- Pour in chicken broth and bring to a boil
- Add the potatoes and the mint and pepper
- Partially cover pan and reduce heat to low and simmer until the potatoes are tender (Usually about 15 minutes)
- Remove pan from element and using a fork, mashed the potatoes into smaller chunks (not too small!) and season soup with salt
- If you have one, throw a washed mint leaf on top to garnish
