Summer Gazpacho

The best soup in the summer hands down. Absolutley loving up on this recipe. A snap to make and a truly great soup to sip or chug !

Serves: 10

Ingredients

1 can of tomato juice

3/4 bottle of clamato juice

1 500 ml canned tomatoes - pureed and strained

7 squirts of worschestershire

4 squirts of tabasco sauce

salt and pepper

a small bunch of chopped mint

1 seeded very finely diced cucumber - skinned

1 very finely diced red pepper

7 very finely chopped scallions

option for fresh grated horseradish, not too much, about 1-2 tbsp worth, as it is very strong

 

Preparation

  • in a large bowl combine all ingresients together and let sit for a few hours so all the vegetables can soak up and soften up and herbs can resonate.
  • garnish with a dollop of sour cream and and finely diced chives.
