Zucchini Soup

An oldschool classic with memories of momma dukes. A rustic fall soup with a power packed punch of flavour, and best of all it's a snap to make.
Ingredients
Serves 10
1 large spanish onion
10 semi peeled zucchini's
2 litres of chicken stock
2 cups of milk - chefs choice
1 cup cream - chefs choice
1/2 cup of butter
large pinch of herbs de provence
large pinch of salt and pepper
smallest pinch of crushed chilis - optional
Preparation
- dice up the onion rustic style and sautee in large soup pot with olive oil
- sweat them out for a bit and add some salt and pepper and the herbs
- add fine diced zucchini and sweat those badboys off for a while, reserving 1 zucchini
- add liquids and butter and bring to a boil
- once its had a chance to cook all the flavours out, take your hand blender or cuisinart and puree it
- witht eh reserved zucchini - shred it in at the end for that rustic edge ; )
