French Canadian Tourtiere

This is a traditional French Canadian Tortiere recipe that has been in our family for over a century. Every Christmas my Dad will make a few of these, one for dinner, and the others to hand out to family. The measurements are pretty specific so I always try and stick to the recipe very exactly. As for the pastry, it's standard fare, other than we use lard rather than butter as the fat. You can always use store bought *gasp* pastry dough if you want to.

Your standard creme brulee recipe, made this on NYE with my lady, and let's just say, a few kisses were thrown around. It's one of the easiest things to make, I had made it before and over-thought it and complicated it, this recipe is a sure thing and fairly straight forward.

Was scouring my fridge the other day, I just wanted to whip up something rustic and easy. Saw that I had pre-cooked potatoes, mushrooms, cheese and sundried tomato pesto. BAM! I thought, why not make little crisps with the pesto and melt some cheese on top? So I did... and they were amazing! A real nice treat when you're watching some NFL on Sunday afternoon.

Beef Stroganoff

Beef Stroganoff is a great recipe if you're looking for a rich and delicious meal, and aren't concerned about counting calories. (The cup of sour cream says it all!) This is specifically a recipe for Beef Stroganoff, but you can always substitute for chicken. Just remember - you won't want to simmer the chicken for the hour that we recommend. Add the chicken about 30 minutes in so it retains its form. For this beef recipe we recommend Stewing Beef - it's a cheaper cut of meat but full of flavour, and after a nice long braise it comes out really tender.

This is a super traditional French recipe for Beef Bourguignon. In fact, this is based on a classic Burgundian recipe I found years ago. Many of the modern takes on Beef Bourguignon will often include tomato sauce, beef stock and sometimes celery. Sounds good right? It sure is, it's called Daube De Boeuf, or Beef Braised in Red Wine and is a completely different dish. Enjoy!
